Winter Squash Topped with Couscous & Garbanzo Beans

Hey everyone! Who loves a warm flavorful meal during the wintertime!? I created this recipe to be easy and delicious for everyone! I hope you enjoy! 


Ingredients 

Squash

Garbanzo Beans (chickpea)

Pearled Couscous

Fresh parsley 

Pomegranate 

Fresh garlic

White onion

Fresh Thyme 

Everything vegetable seasoning 

Rosemary 

Sage 

Vegan garlic butter 

Vegetable broth 

Mixed garlic seasonings 

Salt pepper

 

 Directions

Pre-heat oven to 400


Cut the squash in half, remove seeds, & coat with olive oil then season with garlic, salt, pepper seasoning 

Place the squash inside the oven for 40 min at 400 degrees 

Get a pot and add 1 1/2 cup vegetable broth let it boil then add 1 1/4 cup pearled couscous and add garlic, pepper, salt seasoning 

Thinly slice 1/4 white onion and sautée with olive oil on a non stick pan

Drain and rinse garbanzo beans 

Chop and add fresh garlic to the pan with sautéed onions (desired amount) I used 5 cloves 

Add sage, thyme, rosemary, salt and pepper to pan with onion and garlic 

Add pomegranates and pomegranate juice 

Finely chop half bundle parsley and add to the pot

Add garbanzo beans to the pot and stir frequently 

Add garlic, salt, & pepper seasoning to the pot 

When the couscous is done cooking add it to the pot

Add an everything vegetable seasoning (I used one from Costco)  

Stir occasionally and add garlic Parmesan vegan butter (Miyokos) 

 Once the squash is tender remove from oven and add vegan butter on top, let it melt 

Add the couscous/garbanzo mixture on top and sprinkle more pomegranates in desired amount

When eating this meal scrape the squash with each bite to get all the amazing flavors!
