Delicious cauliflower & couscous bowl

This recipe makes 2 servings

Ingredients:

10 oz Cauliflower  

1 1/4 tsp Smokey harissa & ginger blend 

1/2 cup Toasted pearl couscous 

2 3/4 oz Kale

4 oz Carrots 

4oz Grape tomatoes

1 oz Dates 

2 oz Yellow onion

1/2 oz Sliced almonds 

1 Garlic clove 

1/4 cup Green goddess dressing 

What you’ll need:

Small pot

Large nonstick pan

Baking sheet 

Medium bowl

Measuring cup and spoons 

Oven mitt

Cooking oil

Sal & pepper

Onion powder

Garlic 

 
Step one:

Preheat oven to 425° Degrees  Cut cauliflower into bite-size pieces  Then roughly chopped kale  Cut dates in thin slices. Chop carrots and onion into dice sized pieces. Then roughly chop almonds 

Step two:

Place cauliflower in a medium bowl drizzle with about 1 1/2 teaspoons cooking oil. Season with smoky harissa and ginger seasoning and about half a teaspoon salt.  Stir to coat. 

Step three:

Spread cauliflower out in a single layer on a lightly oiled foil lined baking sheet. Roast about 15 to 20 minutes or until fork tender 

Step four:

 Bring 1 1/4 cups of water in about 1/4 teaspoon salt to a boil in a small pot. Add toasted pearl couscous to boiling water. Stir. Reduce heat to medium low simmer for about 11 to 14 minutes or until couscous is al dente and water is absorbed. While the couscous is cooking add in your desired amount of onion powder and the one chopped garlic clove. 

Step five::

Heat About 1 1/2 teaspoons cooking oil in a large nonstick pan over medium high heat. Add chopped carrots and chopped yellow onions to hot pan.

Then transfer a couscous to bowl. Add kale and dates. Remove cauliflower from oven and remove carrots and onions from the stove. Add everything to the bowl  then mix. Finally drizzle green goddess dressing and garnish with almonds on top and enjoy.
